    So my wonderful neighbor who was half       Puerto Rican and half Polish taught me this recipe and now I'm going to share it with you... Three authentic chichen enchilada's made from scratch with a nice pepper sauce, not too spicy but, just right...served up with Puerto Rican rice and pinto beans for the perfect combination.
